ABOUT OSTRICH
The ostrich is a large, flightless bird with a distinctive appearance. Native to Africa, it has a long neck and legs, and can run for a long time at speeds in excess of 35mph. The ostrich lives in nomadic groups of 5 to 50 birds with territorial males fighting for a harem of two to seven females.
Ostriches lay the largest eggs of any living bird. Each female will produce approximately 40 eggs per year and share incubation duties over a communal "clutch" of up to 20 eggs. Of the 40 eggs laid, 20 will be fertile and 6 - 8 will survive to full maturity to be processed for meat or kept for breeding. The infertile eggs will be sold for consumption.
Although ostriches have a lifespan of 45-60 years, fewer than 10% of nests survive in the wild. Of the surviving chicks, only 15% reach their first year. Ostrich breeders have improved mortality rates through introduction of state-of-the-art incubation chambers and dedicated chick hatcheries.
The ostrich's natural diet consists of seeds, shrubs, grass, fruit, and flowers. Professional breeders typically use commercial feed and monitor intake to ensure maximum nutrition for the entire flock. Despite the warm climate they are accustomed to, the birds require very little water and can attain adequate hydration from eating plants.

Although the color, texture, and taste of ostrich is comparable to prime beef, it has fewer calories, lower cholesterol, and lower fat than chicken or turkey. It contains 84% of the daily requirement for B12, which plays a key role in brain function, is rich in Omega 3’s and iron, and has minimal sodium. Ostrich is recommended by the American Heart Association, the American Cancer Society, and the American Diabetic Association as part of a healthy diet.
